Woke up this morning with a slight headache from the wine, and a strong desire to cook …. and I mean something other than my typical quarter cup of brown rice, so I decided to make baked trout with onion, fennel, potatoes, tomatoes and herbs (thyme and basil from my garden). About 15 minutes into cooking, I realized I could have also added red pepper and white wine, and wished that I had some black olives. Ha ha. Creativity peaks later in the morning, I guess. It started my day with quite the pleasure, which extended all the way through my arrival from Spin this evening and beyond. I’m only sorry for the way the evening ended. Mi dispiace.
(And, no, I typically don’t have trout in my fridge.)
