Nadia’s risotto

Nadia writes this guest entry on what else? Risotto! Seems everyone loves risotto these days…

It was a cold and blustery MLK day. I was at home with the kids, after braving a walk to Rite Aid to buy Max a car with his “savings”. On the walk home after picking up a garbage bag full of trash, I felt we needed just a little pick me up, so……

Max grated a cup of fresh mozarella and a cup of parmesan while I chopped an onion and sauteed it while adding 2 cups of Arborio and 5 1/2 cups of chicken stock in slow, loving ladlefulls over a 25 minute period. We finished the dish with the 2 cheeses and a 1/3 cup of sundried tomatoes in olive oil and 1/4 cup of fresh basil.

 Served it with 2 beautifully grilled veal rib chops and roasted asparagus.

If only every evening could finish so harmoniously with the kids walking themselves to bed, brushing their teeth and chiming down, “Good night parents, we love you…..” and Matt & I finishing our meal with 2 homemade cups of espresso thanks to our newly acquired Gaggia machine.

Not quite how the evening ended, but the risotto was delicious!

    Did you know that Gaggia also makes a gelato machine? My friend Julia brought hers to a dinner party many years ago. Wish she didn’t live in Pittsburgh!
