Showed up at Spin this afternoon expecting to do a recovery ride, but found no instructor there at all, so I stepped in to teach the class. Asked the students what they wanted and ended up doing a third day in a row of anaerobic work. Only downside is the energy kick I get after such rides – not what I’m looking for at the end of a tough workday. Really needed more than a salad at the end of it, so here’s what I made:
Sauteed about a third of a vidalia onion (thinly sliced) in some olive oil, added shrimp, two chopped tomatoes, and a massive amount of basil. That’s it. I ate it with pappardelle: the quickest-cooking pasta I had on hand. The sauce would be better suited for a shaped variety, like farfalle, but the dish was delish! What do people do for dinner when they don’t know how to cook?
