Advent of Autumn

Came back from Spin tonight all excited for my dinner with Lori: pumpkin ravioli in butter & sage (chosen over vegetable lasagna). With fresh pasta sheets from Carlino’s in the fridge, a can of organic pumpkin in the cupboard, and a beautiful sage plant in the garden, making these was a cinch. 

Lisetta’s Pumpkin Ravioli

Sauté finely chopped sweet onion or shallots in some olive oil.

Add pumpkin and cook for several minutes.

Before stuffing the ravioli, add salt, parmigiano and just a tiny bit of sage chiffonade.

Cool the filling and spoon into fresh pasta squares, folded over to make rectangles or triangles. 

Cook in boiling water until they rise to the top, drain and add to meleted butter/sage in a frying pan. 

Sauté until you get crispy edges, then serve with microzested parmigiano.

While sharing stories about my fascinating dating life, I lost track of the butter, which browned a little more than desired. The results of this mistake were most surprisingly pleasant, however. Wish I could say the same with interpersonal mistakes! Pazienza.

What’s not to love about garden sage crisped in butter, anyway?
