Insalata di carote

Luca removed my favorite salad from his menu, so I decided last night that it was high time I make it on my own. It’s one of those things that’s ridiculously simple to do (and mess up). 

caroteJulienne some carrots, dress them with lemon, oil and salt, and plate a mound of it next to sliced avocado, and wonder in amazement how it is that the simplest things can be just as satisfying as the fancy. 

I made the salad again for lunch today, with the addition of fennel. It was fabulous.

  2. He says he needed to switch up the menu a bit. That’s totally cool – I’ve been eating this salad lots lately. Using organic carrots is definitely better. 🙂
