Saffron risotto

It really doesn’t photograph well, but I assure you, the flavor is good. Shallots and sweet onion, carnaroli rice, homemade broth, powdered saffron and some broken threads, microzested parmigiano reggiano. Simple ingredients. Simple pleasures.

Hope to make some homemade gnocchi this weekend – either with potatoes or ‘alla romana”, with semolina.
