Focaccia farcita

Drove up to Patrizia and Boyd’s place for dinner tonight and learned firsthand why it is that Patrizia won the pizzata event a few months ago at Silvia and Matteo’s place!

She began with bags of dough from her local Italian bakery. (Wish I had one of those left of center!) After stretching and pressing the dough into a pie, she rubbed it with oil, sprinkled some salt and baked it on a corn meal-dusted ceramic pizza stone in the oven.


Once it was browned, she took it out and sliced it lengthwise, creating space for the fillings. The first pie included ham and cheese, the second mozzarella, tomato and basil. Simple techniques, really. Both were fabulous!


I really like the idea of making stuffed focaccia at home sometime, but must do so in the company of friends. Eating it solo makes so little sense.
