Fall farrotto

I’ve totally gotten the hang of farro.  Made some tonight for Blaine, using up the post-Thanksgiving turkey broth my mom had sent home with us and some of the beet greens growing in my garden. Started with sweet onion, carrots and lots of rosemary. Added washed farro and lots of broth. Cooked a very long time. This dish smelled too earthy and meaty as it was cooking, but turned out to be quite delicious once it was done:
