Potato-leek-artichoke soup

I made it last night, after yet another exhausting day at work: five potatoes, one leek, a bag of Trader Joe’s frozen artichokes and a half box or vegetable broth. Cooked in the pressure cooker for about a half hour, pureed with a hand blender. I let it cool and then stashed it away in the fridge for dinner tonight. So simple, so delicious, and so unappealing in the photos I tried to snap with the point and click. 🙂

No matter how busy you are, you should always find time to nourish yourself, right?

  1. Oh my, this sounds delicious! What a great combination of veggies. I’m with you. I’ve had such a busy week that tonight I lit 7 or 8 candles, put on some fabulous music, set a nice table and had an arugula salad and a steak . . . dining alone can be a celebration, right?
