Capra Sarda

Another exciting find from Bagliani’s Market in Hammonton, NJ, though I’m not truly sure what it actually is or whether I’ll ever find it again. Perhaps that’s part of its appeal? Its label states only “capra sarda, Sardinian goat”.  It’s white, semi soft and full of flavor. Its thin rind leads me to guess that it’s fairly young.  I ate it with some multigrain toast this morning, just to get its flavor.

This photo resonates, perhaps a little too deeply.
